Four-Ingredient Shortbread Cookies

Ingredients
- 250 g Butter (Softened at room temperature)
- 0.75 cup Powdered sugar (Also called icing sugar)
- 0.5 cup Cornstarch (Also called cornflour in the UK, New Zealand, and Australia)
- 1.5 cup Plain flour (All-purpose flour; use extra for flouring the work surface)
- Caster sugar (Optional, for sprinkling over the hot cookies)

Preheat the oven to 150°C (300°F). Line a baking sheet with parchment paper.

Place the softened butter and powdered sugar in a mixing bowl. Cream them together until the mixture is light, fluffy, and pale.

Sift the cornstarch and plain flour into the creamed butter mixture.

Mix the dry ingredients into the butter mixture just until combined and a soft dough forms. Do not overmix.

On a lightly floured work surface, roll the dough to approximately 1 cm thick. Cut it into 1 cm × 6 cm rectangles, or use any desired shape. Alternatively, shape the dough into a block and slice it into cookies.

Prick each cookie three times with a fork. Arrange the cookies on the lined baking sheet, leaving a little space between them.

Chill the shaped cookies on the baking sheet in the refrigerator for 10 minutes.

Bake at 150°C (300°F) for 15–20 minutes, until the cookies are crisp and pale with only light golden coloring.

Reduce the oven temperature to 130°C (250°F) and continue baking for about 10 minutes, or until lightly golden and crisp.

If desired, sprinkle the cookies with caster sugar immediately after removing them from the oven.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them carefully to a wire rack to cool completely.
