Cookie Butter Cookies with Chocolate

Ingredients
- 1.5 cup all purpose flour
- 0.5 tsp baking soda
- 0.5 tsp baking powder
- 0.5 tsp salt
- 0.5 cup unsalted butter (softened to room temperature)
- 0.5 cup brown sugar
- 0.25 cup granulated sugar
- 0.333 cup Biscoff Cookie Butter
- 1 egg (large, room temperature)
- 1 tsp vanilla extract
- 0.625 cup Biscoff Cookie Butter (melted, for topping; range of 0.5-0.75 cup)
- 0.75 cup semi-sweet chocolate chips (melted)
- 1 tsp Coconut oil (for chocolate chips)
- Biscoff crumbs (for topping)

Preheat the oven to 350℉ (175°C). Line a baking sheet with parchment paper and set aside.

In a bowl, combine the all-purpose flour, baking soda, baking powder, and salt. Whisk together and set aside.

In a stand mixer fitted with a paddle attachment (or using a hand mixer), beat together the softened butter, brown sugar, and granulated sugar until completely incorporated and smooth, about 3 minutes.

Add 1/3 cup of Biscoff cookie butter to the butter mixture and beat until completely combined, about 30 seconds to a minute.

Add the egg and vanilla extract and beat again until combined.

Add the dry ingredients and beat again until all is incorporated. Do not over mix.

Using a 3 tbsp cookie scoop, scoop the cookie dough onto the prepared baking sheet, making sure to keep enough space between the cookies.

Bake for 10 to 12 minutes. The cookies will look "under baked" on top, but they will set as they cool.

Let the cookies cool in the pan for about 5 to 7 minutes, then transfer them to a cooling rack.

In a microwave-safe bowl, add the Biscoff spread for the topping and microwave for 15-20 seconds until melted. Set aside.

In another microwave-safe bowl, combine the chocolate chips and coconut oil. Melt in 15-30 second increments, stirring after each increment until smooth. Do not overheat to avoid seizing.

Add a small amount of melted Biscoff and spread it on top of the cooled cookies, then spread the melted chocolate on top.

Sprinkle Biscoff cookie crumbs on top and enjoy!
Notes
This recipe was updated in 2025 for a thicker, chewier cookie. If you prefer not to use the toppings, you can add chopped chocolate and chopped Biscoff cookies directly into the dough before baking. Under-baking is key to the chewy texture; start checking at 10 minutes.
