Ingredients

  • 500 g Shelf-stable or refrigerated potato gnocchi (one standard package)
  • 400 g Pumpkin (peeled and cut into 1-inch cubes (such as butternut or sugar pumpkin))
  • 200 g Feta cheese (crumbled or cut into cubes)
  • 1 Red onion (cut into wedges)
  • 3 tbsp Extra virgin olive oil
  • 2 cloves Garlic (minced)
  • 1 tbsp Fresh rosemary (chopped)
  • Salt (to taste)
  • Black pepper (freshly ground, to taste)
  • 2 cups Fresh spinach (optional, for tossing at the end)

Steps

    Preheat your oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper or lightly grease it with oil to prevent sticking.

    Place the potato gnocchi, cubed pumpkin, and red onion wedges directly onto the prepared sheet pan.

    Drizzle the olive oil over the ingredients on the pan. Add the minced garlic, chopped rosemary, salt, and black pepper.

    Toss everything together with your hands or a spatula until the gnocchi and vegetables are evenly coated in oil and seasonings. Spread them out into a single layer, ensuring they aren't too crowded so they roast rather than steam.

    Scatter the feta cheese cubes evenly over the top of the gnocchi and pumpkin mixture.

    Place the sheet pan in the preheated oven and roast for 20 to 25 minutes. Halfway through the cooking time, gently toss the ingredients to ensure even browning.

    Remove the pan from the oven when the gnocchi is golden and slightly crisp on the outside, and the pumpkin is fork-tender.

    If using spinach, add it to the hot sheet pan immediately and toss gently; the residual heat will wilt the leaves in about 1 minute.

Notes

For best results, do not boil the gnocchi beforehand; they should go onto the pan dry. If you prefer a bit of heat, add a pinch of red pepper flakes before roasting. Any firm winter squash like Butternut or Kabocha works well as a substitute for pumpkin.
