Ingredients
- vegetable oil (For sautéing, frying the tortillas, and frying the beans; as needed.)
- 0.25 pieza onion (Chopped; the video indicates using a piece of onion.)
- 2 dientes garlic (Chopped or crushed.)
- 0.5 lb ground beef (The amount can be adjusted according to the number of pizzas.)
- salt (To taste, for the beef and beans.)
- black pepper (To taste.)
- paprika (To taste.)
- ground cumin (To taste.)
- 1.5 cup cooked beans (Blended or mashed; packaged prepared beans may also be used. The amount is estimated for two pizzas.)
- garlic powder (To taste, for seasoning the beans.)
- 4 flour tortillas (Any size you prefer; two tortillas are used per pizza.)
- 0.5 cup tomato sauce (Approximately two tablespoons per pizza for the inner layer, plus more for topping.)
- 0.5 cup yellow cheese (Shredded or cut into pieces; approximate amount.)
- 1.5 cup mozzarella cheese (Shredded; added inside and on top of the pizzas.)
- 0.25 cup Mexican crema (For garnish.)
- 1 pieza tomato (Chopped, for garnish.)
- 2 tallos green onions (Chopped, for garnish.)
Steps
- 1
Heat a little vegetable oil in a skillet over medium heat. Add the chopped onion and two garlic cloves, and sauté until the onion begins to soften and the garlic is fragrant, approximately 2 to 3 minutes.
- 2
Add the ground beef to the skillet. Season with salt, black pepper, paprika, and ground cumin. Cook, breaking it up with a spoon, until completely cooked and no longer pink, approximately 7 to 10 minutes.
- 3
Blend or mash the cooked beans until you have a thick, relatively smooth mixture. If preferred, use packaged prepared beans.
- 4
When the beef is ready, temporarily remove it from the skillet. Add the mashed beans to the same skillet and season with garlic powder and salt. Fry over medium heat for a few minutes, stirring, until hot and spreadable.
- 5
Heat oil in another skillet. Fry the flour tortillas one at a time until lightly golden and crisp on both sides. Drain them on paper towels. Alternatively, you can skip this step and use the tortillas unfried.
- 6
Place one tortilla on a work surface. Spread a generous layer of refried beans on top.
- 7
Add a portion of ground beef over the beans, distributing it evenly.
- 8
Add approximately two tablespoons of tomato sauce, followed by the yellow cheese and mozzarella cheese.
- 9
Place another tortilla on top to close the pizza. Spread a layer of tomato sauce over the top tortilla and cover with more mozzarella cheese.
- 10
Preheat the oven to 200 °C. Place the pizzas on a baking sheet and bake for approximately 3 minutes, just until the cheese melts and browns lightly. Watch them closely so the tortillas do not burn.
- 11
As an alternative to the oven, place the assembled pizzas in a covered skillet over very low heat and warm them until the cheese melts, approximately 3 to 5 minutes.
- 12
Garnish the hot pizzas with Mexican crema, chopped tomato, and chopped green onions. Serve immediately to preserve their crisp texture.
Notes
The original recipe does not specify exact quantities for most ingredients; these amounts were estimated for two pizzas. You can adjust the tortilla size and the amount of filling. Frying the tortillas is optional. If using the skillet method, keep the heat very low to prevent them from burning before the cheese melts.
