Ingredients
- 2 tbsp vegetable oil (divided)
- 75 g unroasted cashews
- 500 g skinless chicken thigh fillets (cut into bite-sized chunks)
- 4 celery (sticks, thinly sliced at an angle)
- 2 red peppers (cut into chunks)
- 1 ginger (thumb-sized piece, finely grated)

Heat 1 tbsp of the vegetable oil in a wok or large frying pan over a medium-high heat.

Fry the cashews for a few minutes, tossing frequently, until they are deep golden. Use a slotted spoon to scoop them out onto a plate and set aside.

Add the remaining 1 tbsp of oil to the wok. Once hot, add the chicken chunks and fry for 4-5 minutes, tossing regularly, until really golden brown. Scoop the chicken out onto a plate.

Add the sliced celery and red pepper chunks to the wok and stir-fry for 3-4 minutes or until the vegetables are starting to caramelise.

Add the grated ginger, garlic, and chopped chilli to the pan and fry for another minute until fragrant.

In a small bowl, mix the cornflour and shaoxing rice wine together to form a smooth paste.

Stir the dark soy sauce and 200ml of water into the cornflour paste.

Tip the sauce mixture into the pan along with the cooked chicken and toasted cashews.

Simmer gently for 15 minutes until the chicken is cooked through and tender, and the sauce has thickened to a glossy consistency.

Stir in the runny honey, scatter with the sliced spring onions, and serve immediately with cooked rice.
