Ingredients

  • 3 eggs (whisked)
  • salt (to taste)
  • 0.5 tsp sugar (for eggs)
  • 1 tbsp cooking oil (for the pan)
  • 1 tsp ginger (minced)
  • 0.5 lb ground beef
  • 1 tsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tsp sugar (for the beef sauce)
  • 1 tbsp sake
  • 1.5 cup cooked rice (freshly cooked)
  • chives (optional garnish)
  • sesame seeds (optional garnish)

Steps

    Crack three eggs into a bowl. Add a pinch of salt and sugar, then whisk until the ingredients are fully incorporated.

    Heat a pan over medium heat and add cooking oil. Pour in the whisked eggs and scramble them until fully cooked. Remove the eggs from the pan and set aside.

    In the same pan, add the minced ginger and cook until fragrant.

    Add the ground beef to the pan, breaking it apart with a spatula. Cook until the beef is browned.

    Add the dark soy sauce, light soy sauce, sugar, and sake to the beef. Mix well and continue to cook until the sauce thickens and coats the meat.

    Remove the beef from the heat.

    Place a serving of fresh rice in a bowl. Top with the cooked ground beef and the scrambled eggs.

Notes

This dish is a variation of Soboro Don. You can adjust the sweetness by varying the amount of sugar in the beef mixture.
