Strawberry Cheesecake Truffles
Delicious bite-sized treats that taste like strawberry cheesecake but are served in a practical truffle format. Perfect for parties or as a sweet snack in between.

Ingredients
- 50 g Whole wheat biscuits
- 20 g dried strawberries (some for the filling, some as powder)
- 120 g cream cheese
- 20 g powdered sugar
- 0.5 tsp vanilla extract
- salt (a pinch)
- 100 g white chocolate

Place some of the dried strawberries in a food processor and grind into a coarse powder. Set this powder aside to roll the truffles in or sprinkle over them later.

Also place the whole wheat biscuits in the food processor and grind into fine crumbs.

In a bowl, mix the cream cheese with the powdered sugar, vanilla extract, and a pinch of salt until smooth.

Fold the biscuit crumbs and the remaining finely chopped dried strawberries into the cream cheese mixture until a moldable mixture forms.

Form small balls from the mixture and refrigerate for about 15-20 minutes until firm.

In the meantime, melt the white chocolate in a double boiler or carefully in the microwave.

Using a fork, dip the chilled balls into the melted white chocolate, let them drip off, and place them on parchment paper.

Before the chocolate sets, sprinkle the truffles with the prepared strawberry powder. Allow to set completely.
Notes
For best results, store the truffles in the refrigerator until serving. If the mixture is too soft to roll, simply chill it briefly.
