Ingredients

  • 2 cup Fine bulgur
  • 2 cup Hot water
  • 1 Onion
  • 1 clove Garlic
  • 1 tea glass Olive oil
  • 1 tea glass Pomegranate molasses
  • 1 tbsp Tomato paste
  • 1 tbsp Pepper paste
  • 0.5 tea glass Isot pepper
  • 0.5 tea glass Sumac
  • 1 tsp Salt
  • 1 tbsp Aleppo pepper flakes

Steps

  1. 1

Place the fine bulgur in the bowl of a food processor.

  2. 2

Pour 2 cups of hot water over it and let it rest for 5 minutes.

  3. 3

Add the onion, garlic, olive oil, pomegranate molasses, tomato and pepper pastes, isot pepper, sumac, salt, and Aleppo pepper flakes to the rested bulgur.

  4. 4

Process in a food processor or chopper for approximately 5 minutes, until the mixture thickens and comes together. If your processor has a low-power motor, halve the quantities to prevent damaging it.

  5. 5

Take portions of the mixture, shape them by hand, and serve.

Notes

The source recommends halving the quantities if the food processor has a low-power motor. Since the cup volumes are not specified, the gram equivalents are approximate.
