Ingredients

  • 0.5 cup Fresh parsley (Finely chopped)
  • 0.333 cup Fresh cilantro (Finely chopped)
  • 1 tbsp Dried oregano
  • 2 Garlic (Finely chopped)
  • 0.25 cup Red bell pepper (Finely chopped; it can be roasted directly over the stovetop or in an air fryer at maximum temperature until the skin is charred and can be removed)
  • 1 Lemon juice (Juice of 1 lemon)
  • 0.5 tsp Salt
  • Black pepper (To taste)
  • 0.5 cup Olive oil (The post specifies “1/2 cup”)
  • 0.25 cup Red wine vinegar
  • 4 Chorizo sausages (Use good-quality chorizo; the quantity is an estimate for 4 choripanes)
  • 4 Baguette (Use the bread you prefer; the author used baguette. The quantity is an estimate for 4 servings)

Steps

    Prepare the bell pepper. Roast it directly over the stovetop flame or place it in an air fryer at maximum temperature until the skin is visibly charred and blistered. Let it rest for a few minutes, remove the charred skin, discard the seeds, and finely chop it.

    Finely chop the parsley, cilantro, and garlic cloves. Measure out the dried oregano, salt, olive oil, and red wine vinegar.

    Place the parsley, cilantro, dried oregano, garlic, and chopped bell pepper in a bowl.

    Add the lemon juice, salt, pepper to taste, olive oil, and red wine vinegar. Mix until combined and let the chimichurri rest while you cook the chorizo so the flavors can develop.

    Heat a cast-iron grill pan over medium-high heat until very hot. There is no need to use an outdoor grill; the pan will help create grill marks and a flavor similar to that of a barbecue.

    Place the chorizo sausages in the hot pan. Cook them, turning frequently, until browned on the outside and fully cooked in the center, approximately 12 to 15 minutes, depending on their size. If they are very thick, lower the heat slightly to prevent them from burning before cooking through.

    Open the baguette or cut it into individual portions. If desired, briefly toast it in the same pan after removing the chorizo, cut side down, until slightly crisp.

    Place one chorizo sausage inside each portion of bread and serve the choripanes with plenty of chimichurri on top or on the side.

Notes

The post suggests serving them with a good beer. The quantities of chorizo and baguette were not specified; four of each were estimated for four servings. The chimichurri can be prepared in advance and refrigerated; let it come to room temperature and mix it before serving.
