Ingredients
- 2 sticks unsalted butter (melted and browned)
- 2.5 cup all-purpose flour
- 1 tsp baking soda (added to flour)
- 0.5 tsp salt (added to flour)
- 2 eggs
- 1 cup brown sugar
- 0.5 cup granulated sugar
- 1 tbsp vanilla extract
- 1 cup Fruity Pebbles cereal
- 1 cup white chocolate pieces

Preheat your oven to 350°F (175°C).

Brown the 2 sticks of unsalted butter in a saucepan over medium heat until it smells nutty and develops golden-brown flecks. Let it cool slightly before using.

In a medium bowl, whisk together the 2 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.

In a large mixing bowl, combine the melted brown butter with 1 cup of brown sugar and 1/2 cup of granulated sugar. Mix until well combined.

Add the 2 eggs and 1 tablespoon of vanilla extract to the sugar mixture and beat until smooth.

Gradually stir the dry flour mixture into the wet ingredients until just combined.

Fold in 1 cup of Fruity Pebbles and 1 cup of white chocolate pieces.

Scoop the dough onto a baking sheet, spacing them apart.

Remove from the oven and let the cookies rest on the baking sheet at room temperature for at least 3 minutes to set before moving them.
Notes
To brown butter: Melt butter in a light-colored pan over medium heat. Whisk constantly as it foams. Once you see brown bits at the bottom and it smells like toasted nuts, remove from heat immediately to prevent burning. Some users suggest chilling the dough before baking to help the cookies hold their shape better.
