Ingredients
- 2 tbsp vegetable oil (for frying)
- 4 garlic (cloves, finely minced)
- 1 green chili (finely chopped)
- 1 tsp chili flakes (adjust to taste)
- 2 eggs (large)
- 2 cup cooked rice (preferably day-old cold rice)
- 1 tbsp soy sauce
- 1 tsp vinegar (rice vinegar or white vinegar)
- salt (to taste)
- black pepper (to taste)
- 1 stalk spring onions (chopped, for garnish)
Steps
- 1
Heat vegetable oil in a large pan or wok over medium-high heat.
- 2
Add the minced garlic and chopped green chili. Sauté for about 1 minute until the garlic becomes fragrant and slightly golden, but be careful not to burn it.
- 3
Add the chili flakes to the oil and stir for 10-20 seconds to infuse the spice.
- 4
Push the aromatics to one side of the pan and crack the eggs into the empty space. Scramble the eggs until they are mostly set but still slightly soft.
- 5
Add the cooked rice to the pan. Break up any large clumps of rice with your spatula.
- 6
Pour in the soy sauce and vinegar. Season with salt and black pepper to taste.
- 7
Toss everything together over high heat for 2-3 minutes, ensuring the rice is evenly coated and heated through.
- 8
Garnish with chopped spring onions and serve hot.
Notes
Using day-old, cold rice is essential for fried rice to prevent it from becoming mushy. If using fresh rice, spread it on a tray and let it cool completely in the fridge for at least 30 minutes before cooking.
