Crockpot Smothered Chicken

Ingredients
- 5 chicken thighs (bone-in or boneless)
- 1 chicken breast
- adobo seasoning (to taste)
- Mrs. Dash Ultimate Garlic Blend (to taste)
- smoked paprika (to taste)
- black pepper (to taste)
- Slap Ya Mama Cajun Seasoning (to taste)
- 2 tbsp vegetable oil (for searing)
- 1 onion (sliced)
- 1 bell pepper (sliced)
- 10.5 oz cream of chicken soup (1 can)
- 10.5 oz cream of mushroom soup (1 can)
- 1 packet low-sodium brown gravy mix

Season the chicken thighs and chicken breast with adobo, Mrs. Dash Ultimate Garlic Blend, smoked paprika, black pepper, and Slap Ya Mama seasoning to taste.

Heat oil in a skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until a nice crust forms. The chicken does not need to be cooked through at this stage.

Place the seared chicken in the bottom of the crockpot.

Top the chicken with the sliced onions and peppers.

In a separate bowl, mix together the can of cream of chicken soup, the can of cream of mushroom soup, and the packet of low-sodium brown gravy mix.

Spread the soup mixture evenly over the top of the vegetables and chicken in the crockpot.

Cover and cook on high for 4-5 hours or on low for 5-6 hours until the chicken is tender.
Notes
The searing step is optional but highly recommended for better flavor and texture. You can adjust the ratio of thighs to breasts based on what you have available.
