Tuna Nicoise Sandwich
A beautiful layered and pressed tuna sandwich inspired by the flavors of a Nicoise salad, featuring marinated cucumbers, onions, and hard-boiled eggs inside a hollowed-out boule.

Ingredients
- 2 large eggs (hard-boiled, peeled, and sliced)
- 1 tbsp Dijon mustard
- 2 tbsp white wine vinegar
- 3 tbsp extra virgin olive oil
- salt (to taste)
- black pepper (to taste)
- 2 can canned tuna (drained; water-packed or oil-packed)
- 0.5 English cucumber (sliced very thin)
- 0.5 red onion (sliced very thin)
- 1 bread boule (large loaf, fresh)
- 1 bunch fresh basil leaves

Hard-boil the eggs: Place eggs in a pot and cover with one inch of water. Bring to a boil, then remove from heat. Cover the pot and let sit for 13 minutes. Drain and run under cold water until cool. Peel and slice the eggs.

Prepare the vinaigrette: In a small bowl, whisk together 1 tablespoon of mustard, 2 tablespoons of white wine vinegar, and 3 tablespoons of extra virgin olive oil until creamy and emulsified. Season with salt and pepper.

Dress the tuna: Place the drained tuna in a bowl and add about 2 tablespoons of the prepared vinaigrette. Toss to coat well so the tuna isn't dry.

Marinate the vegetables: Thinly slice half of the English cucumber and half of the red onion. Place them in the remaining vinaigrette and stir to coat, letting them marinate to soften the raw onion flavor.

Prep the bread: Cut the bread boule in half horizontally. Pull out some of the soft bread from the center of both the top and bottom halves to create a cavity for the fillings.

Assemble the sandwich: Layer the dressed tuna, marinated cucumbers and onions, sliced eggs, and fresh basil leaves inside the hollowed-out bread.

Press and rest: Close the sandwich. For best results, wrap the sandwich and let it press/rest (ideally from morning until evening) to allow the flavors to meld and the bread to absorb the dressing.
Notes
If you dislike raw onion, you can omit it, though the vinaigrette helps mellow the flavor. This sandwich is excellent for make-ahead meals as the resting time improves the texture and flavor.
