Ingredients

  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil (divided)
  • 1 tbsp capers (chopped)
  • 2 scallions (1 finely chopped and 1 thinly sliced)
  • 0.5 tsp Kosher salt (divided; plus more to taste)
  • 0.75 tsp black pepper (divided; plus more to taste)
  • 1 pt grape tomatoes
  • 1 lb skinless salmon filet (cut into 1 1/2 inch pieces)
  • 1 tbsp flat-leaf parsley (chopped)
  • 1 cup labneh or Greek yogurt (for serving)
  • 4 naan or flatbread (warmed)
  • 2 cup baby arugula or kale
  • 0.5 cup crumbled feta (for serving)

Steps

    In a small bowl, combine 1 tablespoon red wine vinegar, 1 tablespoon olive oil, 1 tablespoon chopped capers, 1 finely chopped scallion, and 1/4 teaspoon pepper; set this dressing aside.

    Preheat your air fryer to 400°F (200°C).

    In a medium bowl, toss the grape tomatoes with the remaining 1 tablespoon olive oil and 1/4 teaspoon each of Kosher salt and pepper.

    Season the salmon pieces with 1/4 teaspoon each of Kosher salt and pepper.

    Place the salmon in a single layer on one side of the air fryer basket.

    Add the seasoned tomatoes to the remaining space in the basket, piling them if necessary.

    Air-fry at 400°F until the salmon is just barely opaque throughout and the tomatoes have softened, about 6 minutes.

    Transfer the cooked tomatoes to the bowl with the vinegar-scallion dressing.

    Add 1 tablespoon chopped parsley to the tomato mixture and toss to combine.

    Spread a layer of labneh or Greek yogurt onto each warmed flatbread.

    Top the flatbreads with the air-fried salmon pieces and baby arugula.

Notes

For a lower-carb option, you can serve the salmon and tomato mixture over a large bed of greens instead of flatbread. If you don't have labneh, full-fat Greek yogurt is an excellent substitute.
