Ingredients
- 1 tsp yeast
- 1 tbsp sugar
- 270 g milk (about 1 cup + 2 tbsp)
- 380 g flour (about 3 cups)
- 1 tsp salt
- 43 g butter (softened; about 3 tbsp)
- 100 g butter (softened)
- 1 tbsp cilantro (chopped)
- 1 garlic (minced)
- 1 cup cheddar cheese (shredded)
Steps
- 1
In a bowl, mix the sugar and yeast.
- 2
Add the milk, then add the flour and mix until combined.
- 3
Add the salt and softened butter, then coil fold until the butter is fully incorporated.
- 4
Cover the bowl and let the dough rest for 2 hours or until doubled in size.
- 5
In a separate small bowl, mix the 100g of softened butter with the chopped cilantro and minced garlic.
- 6
Roll the dough into a rectangle and spread the garlic butter mixture evenly over the surface.
- 7
Sprinkle the shredded cheddar cheese over the buttered dough.
- 8
Cut the dough in half, stack one half on top of the other, then cut into strips.
- 9
Transfer the pieces into a loaf pan.
- 10
Cover and let the dough rest for 20 minutes.
- 11
Bake at 370°F (188°C) for 30 minutes, or until the bread is golden brown.
- 12
Brush the bread with the remaining garlic butter mixture while it is still warm.
Notes
The recipe uses a 'coil fold' technique to incorporate the butter into the dough rather than traditional kneading. Ensure the butter is truly softened to room temperature for both the dough and the filling to ensure even distribution.
