Ingredients

  • 2 lb ribeye or sirloin (cut into bite size pieces)
  • 2 tsp garlic powder (for steak)
  • 2 tsp worcestershire sauce
  • 1 tsp thyme
  • 1 tsp rosemary
  • salt and pepper (to taste)
  • 12 oz cavatapi noodles
  • 1 lb white sharp cheddar (shredded)
  • 0.5 lb gruyere (shredded)
  • 0.5 lb mozzarella (shredded)
  • 0.25 cup parmesan cheese (shredded)
  • 16 oz evaporated milk
  • 1.5 cup heavy cream
  • 3 tbsp butter (for roux)
  • 3 tbsp all purpose flour
  • 2 tsp garlic powder (for mac & cheese)
  • 1 tsp parmesan truffle seasoning (optional)
  • 2 tsp white truffle oil
  • 0.5 tsp mustard powder
  • 0.25 tsp nutmeg
  • salt and pepper (to taste)
  • 1 stick butter (softened (1/2 cup))
  • 5 garlic cloves
  • 1 lemon (zested)
  • 0.25 cup parsley
  • 0.25 cup chives
  • salt (to taste)

Steps

    Prepare the compound butter by combining 1 stick of softened butter, 5 minced garlic cloves, lemon zest, 1/4 cup parsley, 1/4 cup chives, and salt. Mix until well combined and set aside.

    Boil the cavatapi noodles in salted water according to package instructions until al dente. Drain and set aside.

    In a large pot or saucepan over medium heat, melt 3 tbsp of butter. Whisk in 3 tbsp of all-purpose flour and cook for 1-2 minutes to create a roux.

    Slowly whisk in the evaporated milk and heavy cream. Continue to whisk until the mixture is smooth and begins to thicken slightly.

    Season the sauce with 2 tsp garlic powder, 1 tsp parmesan truffle seasoning (if using), 2 tsp white truffle oil, 1/2 tsp mustard powder, 1/4 tsp nutmeg, salt, and pepper.

    Reduce heat to low and stir in the shredded white sharp cheddar, gruyere, mozzarella, and parmesan cheese until completely melted and the sauce is smooth.

    Fold the cooked cavatapi noodles into the cheese sauce until evenly coated. Keep warm.

    Season the steak bites with 2 tsp garlic powder, 2 tsp worcestershire sauce, 1 tsp thyme, 1 tsp rosemary, salt, and pepper.

    Heat a large skillet over high heat. Add the steak bites in a single layer (work in batches if necessary) and sear until browned on all sides, about 2-3 minutes per side.

    Add the prepared garlic butter compound butter to the skillet with the steak bites. Toss the steak in the melting butter for 1 minute until well coated and fragrant.

Notes

For the best results, shred your own cheese from blocks rather than using pre-shredded bags to ensure a smoother melt in the mac and cheese sauce.
