Ingredients
- 1 tsp yeast
- 1 tbsp sugar
- 270 g milk
- 380 g flour
- 1 tsp salt
- 43 g butter (softened)
- 100 g butter (softened, for butter mixture)
- 1 tbsp cilantro (chopped)
- 1 garlic (clove, minced)
- 1 cup shredded cheese (cheddar recommended)
Steps
- 1
In a bowl, mix the sugar and yeast together.
- 2
Add the milk, then add the flour and mix until combined.
- 3
Add the salt and 43g of softened butter, then perform coil folds until the butter is fully incorporated into the dough.
- 4
Cover the bowl and let the dough rest for 2 hours or until it has doubled in size.
- 5
In a separate small bowl, mix the 100g of softened butter with the chopped cilantro and minced garlic.
- 6
Roll the dough out into a rectangle and spread the garlic butter mixture evenly over the surface.
- 7
Sprinkle the dough with shredded cheddar cheese.
- 8
Cut the dough in half, stack one half on top of the other, then cut into strips.
- 9
Transfer the pieces into a loaf pan.
- 10
Cover and let the dough rest for 20 minutes.
- 11
Bake at 370°F (188°C) for 30 minutes, or until the bread is golden brown.
- 12
Brush with any remaining garlic butter mixture while the bread is still warm.
Notes
The recipe uses 'coil folds' which is a gentle way to incorporate butter and build dough strength without heavy kneading. Ensure the milk is slightly warm to help activate the yeast.
