Ingredients
- 1 tsp yeast
- 1 tbsp sugar
- 270 g milk
- 380 g flour
- 1 tsp salt
- 43 g butter (softened)
- 100 g butter (softened, for the butter mixture)
- 1 tbsp cilantro (chopped)
- 1 garlic (clove, minced)
- shredded cheddar cheese (to taste)
Steps
- 1
In a bowl, mix the 1 tbsp sugar and 1 tsp yeast.
- 2
Add the 270g milk to the bowl.
- 3
Add the 380g flour and mix until combined.
- 4
Add the 1 tsp salt and 43g softened butter, then coil fold until the butter is fully incorporated into the dough.
- 5
Cover the bowl and let the dough rest for 2 hours or until it has doubled in size.
- 6
In a separate small bowl, mix the 100g softened butter with the 1 tbsp chopped cilantro and 1 minced garlic clove.
- 7
Roll the dough into a rectangle and spread the garlic butter mixture evenly over the surface.
- 8
Sprinkle the dough rectangle with shredded cheddar cheese.
- 9
Cut the dough in half, stack one half on top of the other, then cut into strips.
- 10
Transfer the pieces into a loaf pan.
- 11
Cover the pan and let the dough rest for 20 minutes.
- 12
Bake at 370°F (188°C) for 30 minutes, or until the top is golden brown.
- 13
Brush the bread with any remaining garlic butter mixture while it is still warm.
Notes
The recipe uses a 'coil fold' technique to incorporate the butter, which helps build dough structure. Ensure the milk is slightly warm to help activate the yeast.
