Ingredients
- 400 g Greek yogurt (plain, low-fat or 0% for diet version)
- 2 eggs
- 2 tbsp sweetener (to taste, such as erythritol or stevia)
- 40 g cornstarch
- 1 tsp vanilla extract
- 100 g mixed berries (fresh or frozen raspberries, blueberries, or blackberries)

Preheat your oven to 350°F (180°C).

In a medium mixing bowl, combine the Greek yogurt, eggs, sweetener, cornstarch, and vanilla extract.

Whisk the mixture thoroughly until smooth and no lumps of cornstarch remain.

Pour the batter into a small parchment-lined baking dish or silicone mold.

Scatter the mixed berries evenly over the top of the batter.

Place in the oven and bake for approximately 30-35 minutes, or until the edges are set and the center has a slight jiggle.

Notes
This is a crustless 'yogurt cake' style cheesecake. For best results, use a thick yogurt like Greek yogurt. If using frozen berries, do not thaw them first to prevent excessive bleeding into the batter.
