Ingredients

  • 400 g Greek yogurt (plain, low-fat or 0% for diet version)
  • 2 eggs
  • 2 tbsp sweetener (to taste, such as erythritol or stevia)
  • 40 g cornstarch
  • 1 tsp vanilla extract
  • 100 g mixed berries (fresh or frozen raspberries, blueberries, or blackberries)

Steps

    Preheat your oven to 350°F (180°C).

    In a medium mixing bowl, combine the Greek yogurt, eggs, sweetener, cornstarch, and vanilla extract.

    Whisk the mixture thoroughly until smooth and no lumps of cornstarch remain.

    Pour the batter into a small parchment-lined baking dish or silicone mold.

    Scatter the mixed berries evenly over the top of the batter.

    Place in the oven and bake for approximately 30-35 minutes, or until the edges are set and the center has a slight jiggle.

    Allow the cheesecake to cool completely before slicing to ensure it sets properly.

Notes

This is a crustless 'yogurt cake' style cheesecake. For best results, use a thick yogurt like Greek yogurt. If using frozen berries, do not thaw them first to prevent excessive bleeding into the batter.
