Steps
Cook the Otoki ramen noodles according to the package instructions. Before draining, reserve a bit of the cooking water for the sauce.
In a pan over medium heat, melt 1 tablespoon of butter (or olive oil).
Add the minced garlic to the pan and cook briefly until fragrant.
Add chili flakes, black pepper, and a pinch of salt to the garlic and butter.
Pour in the heavy cream and bring the mixture to a gentle simmer.
Add the lemon zest and lemon juice to the cream, and stir until well combined.
Add the cooked noodles and a splash of the reserved cooking water to the pan. Toss the noodles to coat them in the cream mixture.
Add the Otoki cheese packets and mix everything together thoroughly until the sauce is glossy and creamy.
Serve immediately, garnished with extra grated parmesan and fresh parsley.
Notes
The author recommends using Otoki Cheddar & Mascarpone ramen for the best results. If you cannot find this specific brand, you can use standard ramen and supplement with a mix of cheddar and mascarpone powders or cheeses.
