Ingredients
- 400 g seasoned ground chicken
- 220 g rice (Weighed uncooked)
- 400 g green beans (Cut into small pieces)
- 3 shallots (Finely chopped; approximately 120 g total)
- 3 teentjes garlic (Finely minced; approximately 9 g total)
- 2 red chilies (Seeds and membranes removed, finely sliced)
- 40 g fresh basil (Leaves)
- 2 el oyster sauce (For the sauce)
- 2 tl soy sauce (For the sauce)
- 2 el fish sauce (For the sauce)
- 2 el sweet soy sauce (For the sauce)
- 1 tl garlic powder (For seasoning)
- 1 tl onion powder (For seasoning)
- black pepper (A pinch, to taste)
- fried egg (Optional, as a topping; not included in the macros)
Steps
- 1
Cook the rice according to the package instructions. Drain when cooked and keep warm.
- 2
Meanwhile, heat a large skillet or wok over medium heat. Fry the seasoned ground chicken until crumbly and golden brown, breaking it into small pieces with a spatula as it cooks.
- 3
Add the finely chopped shallots, minced garlic and finely sliced red chilies. Stir-fry for a few minutes until the shallots soften and the aromatics become fragrant.
- 4
Add the green beans cut into small pieces. Stir-fry until tender-crisp: cooked through but still with a distinct crunch.
- 5
Add the oyster sauce, soy sauce, fish sauce and sweet soy sauce. Stir well so the chicken and vegetables are evenly coated with the sauce.
- 6
Season the mixture with garlic powder, onion powder and a pinch of black pepper. Heat the sauce through briefly and taste, adding more pepper if needed.
- 7
Finally, add the fresh basil leaves. Toss briefly, only until they just begin to wilt; this keeps the basil flavor fresh and pronounced.
- 8
Divide the rice among four bowls or plates and spoon the chicken and vegetable mixture on top. Serve with a fried egg on top if desired.
