Rotiboy-Style Coffee Bun Toast
A homemade version of Malaysia’s fragrant Rotiboy coffee bun, made by spreading a buttery, crackly coffee-flavored paste over bread and baking until bronzed. The topping can also be refrigerated and used whenever a coffee-bun craving strikes.

Ingredients
- 1 slice white bread, milk bread, or other bread (Use a sturdy slice that can hold the coffee paste.)
- 120 g unsalted butter (Softened.)
- 100 g sugar
- 1 egg (Use at room temperature if possible.)
- 5 g instant coffee powder
- 15 ml hot water (Used to dissolve the coffee powder.)
- 120 g all-purpose flour
- 5 ml vanilla extract
- salt (1 pinch.)

Preheat the oven to 180°C / 350°F. Line a small baking sheet or toaster-oven tray with parchment paper, if using.

Dissolve the instant coffee powder in the hot water, stirring until smooth and no dry granules remain. Set it aside briefly to cool slightly.

In a bowl, beat the softened butter and sugar together until smooth and creamy.

Add the egg and vanilla extract to the butter mixture, then beat until fully combined. The mixture may look slightly curdled, which is fine.

Add the dissolved coffee and stir until the mixture is evenly coffee-colored and fragrant.

Add the flour and pinch of salt. Mix just until a thick, spreadable paste forms; avoid overmixing once the flour is incorporated.

Place the bread slice on the prepared tray. Spread the coffee paste evenly over the entire top surface, or transfer the paste to a piping bag and pipe it over the bread for a neater finish.

Bake at 180°C / 350°F for 12–15 minutes, until the topping is puffed and beautifully bronze with a lightly crackly surface and the bread is crisp around the edges.

Let the toast cool for a minute or two, then serve warm while the coffee aroma and buttery topping are at their strongest.
Notes
The coffee paste can be made in advance, stored in a jar in the refrigerator, and spread onto bread whenever desired. If refrigerated, let it soften enough to spread or pipe. The source does not specify a bread quantity beyond using a piece of bread; the nutrition estimate assumes one slice.
