Budget Lobster Rolls (Shrimp Style)
An affordable and delicious version of the classic lobster roll using shrimp instead of lobster. It is a fresh meal, perfect for taking to the beach, and can be prepared in advance.

Ingredients
- 6 garlic (cloves, finely minced)
- 3 tbsp unsalted butter
- 600 g shrimp (peeled, deveined, and cut into 2 or 3 pieces)
- 1 lemon zest (from one whole lemon)
- 100 g celery (chopped)
- 50 g chives (chopped)
- 1 tsp salt
- 30 g mayonnaise (the author recommends avocado oil mayonnaise)
- lemon juice (a squeeze to taste)
- 6 brioche-style egg buns (hot dog style)

Finely mince the 6 cloves of garlic.

In a skillet, sauté the minced garlic with the 3 tbsp of unsalted butter.

Cut the 600 g of cleaned shrimp into two or three pieces each.

Add the shrimp to the skillet with the garlic butter and cook for about 5 minutes. Remove from the heat and let cool in the refrigerator.

While the shrimp are cooling, finely chop the 100 g of celery, the 50 g of chives, and zest the whole lemon.

Once the shrimp are cold, place them in a bowl and add the celery, chives, lemon zest, 30 g of mayonnaise, salt, and a squeeze of lemon juice.

Mix all ingredients well and taste to adjust the seasoning. Cover and refrigerate until ready to serve.

To serve, take the brioche-style egg buns and slice them down the center (hot dog style). Warm or toast them lightly.

Fill each bun with the cold shrimp mixture and finish with an extra touch of lemon on top if desired.
Notes
You can prepare the shrimp mixture in advance and keep it in the fridge; this allows the flavors to meld better. The author suggests using avocado mayonnaise for a fresher flavor profile.
