Claypot Style Vermicelli with Pork and Prawns

Ingredients
- 400 g Minced pork (Marinated for 30 mins with soya sauce, wine, sesame oil, pepper, and cornstarch)
- 10 Prawns (Peeled and deveined; marinated for 30 mins)
- 3 bunches Vermicelli (Also known as tanghoon)
- Wongbok cabbage (Napa cabbage, leaves separated to line the pot)
- Dried beancurd skin (Also known as tofu skin)
- 1 pack Enoki mushrooms (Trimmed)
- 0.5 Onion (Finely chopped)
- 3 cloves Garlic (Minced)
- Light soya sauce (Used in marinade and sauce)
- Oyster sauce (Used in marinade and sauce)
- Shaoxing wine (Or mirin, for marinade and sauce)
- Sesame oil (For marinade)
- White pepper (For marinade)
- Cornstarch (For marinade)
- Chicken stock (Enough to reach halfway up the pot; can use water)
- Spring onions (Chopped for garnish)
- 1 tbsp Neutral oil (For sautéing)

Marinate the 400g minced pork and 10 peeled prawns with light soya sauce, oyster sauce, Shaoxing wine (or mirin), sesame oil, white pepper, and cornstarch for at least 30 minutes.

In a pot, heat a drizzle of neutral oil and sauté the chopped onions and garlic until fragrant.

Add soya sauce, oyster sauce, and a touch of sugar to the onions and garlic. Let the mixture bubble briefly, then remove the sauce from the pot and set it aside.

Wipe the pot clean. Line the base of the pot with a layer of Wongbok cabbage leaves.

Place the 3 bunches of vermicelli over the cabbage, then lay the dried beancurd sheets over the vermicelli to form a base.

Spread the marinated minced pork evenly over the beancurd sheets.

Add the enoki mushrooms on top of the pork layer.

Carefully drizzle the cooked onion and garlic sauce over the assembled layers.

Pour in chicken stock (or water) until the liquid reaches halfway up the side of the pot.

Cover the pot and simmer on the lowest heat setting for 10 minutes.

Place the marinated prawns on top of the other ingredients. Cover and continue to cook for another 5 to 7 minutes until the prawns and meat are fully cooked through.

Switch off the heat, garnish with chopped spring onions, and serve hot.
Notes
The vermicelli will soak up all the juices from the pork and the seasoned stock. You can substitute chicken mince for pork if preferred. Mirin can be used as a substitute for Shaoxing wine.
