    Roast the potatoes for 20 minutes, until they are beginning to brown and feel almost tender when pierced with a knife.

    While the potatoes roast, whisk together the Dijon mustard, honey, lemon juice, minced garlic, dried thyme, a pinch of salt, and black pepper in a small bowl until smooth.
