Ingredients

  • 1 oz cacao butter (Skip for the oil-free version.)
  • 8 pitted dates
  • 2.5 cup strong hot coffee
  • 0.333 cup full-fat coconut milk (A thick canned coconut milk is recommended; any plant-based milk may be substituted.)
  • 0.25 cup peanut butter (May substitute another nut or seed butter.)
  • 3 tbsp vegan chocolate protein powder (The author recommends a chocolate vegan protein powder without stevia.)

Steps

  1. 1

Add the cacao butter and pitted dates to a high-speed blender. Pour the hot coffee directly over them, cover the blender, and let it sit so the cacao butter melts and the dates soften.

  2. 2

Add the coconut milk, peanut butter, and vegan chocolate protein powder. Blend on high for 1 minute, until creamy and slightly foamy on top.

  3. 3

Pour into two large mugs and serve immediately. Add a sprinkle of cocoa powder or cinnamon if desired.

Notes

For an oil-free version, omit the cacao butter. Leftovers can be saved and reheated the next day; the drink thickens as it cools and regains its velvety texture when reheated. Blend it again after reheating to refresh the foam. Cocoa powder and cinnamon are optional serving garnishes; no amounts are specified.
