Ingredients
- 1 cup butter (room temperature)
- 2 cup light brown sugar
- 2 eggs (large)
- 1 tsp vanilla
- 1.5 cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1.5 tsp salt
- 3 cup quick oats
- 0.75 cup powdered sugar (for rolling)

Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper to prevent sticking.

In a large mixing bowl, add the room temperature butter and light brown sugar. Mix together until the texture is smooth and well combined.

Add the eggs to the butter mixture one at a time, mixing well after each addition, then stir in the vanilla extract.

Add the flour, baking soda, baking powder, and salt to the wet ingredients. Mix until just combined, being careful not to overwork the dough.

Gently fold in the quick oats until they are evenly distributed throughout the dough.

Place the powdered sugar into a small separate bowl for coating.

Using a cookie scoop or a spoon, portion the dough into approximately 1.5 tablespoon-sized balls.

Roll each dough ball in the powdered sugar until fully coated, then place them on the prepared baking sheets. Space them well apart, as the cookies will spread; baking 8 cookies per sheet is recommended.

Bake for 12-14 minutes, or until the cookies are golden through the center.
Notes
The cookies will spread during baking, so ensure adequate spacing on the baking sheet. If you don't have parchment paper, a silicone baking mat is a good alternative.
