Ingredients

  • 1.5 cup White rice (rinsed)
  • 1.5 cup Water (for cooking the rice)
  • 0.4 lb Chicken breast (diced into small cubes)
  • 0.4 lb Pork (diced into small cubes)
  • 0.4 lb Shrimp (cleaned)
  • 3 Eggs (beaten with a pinch of salt)
  • 1 Carrot (diced into small cubes)
  • 2 stalk Celery (finely chopped)
  • 3 stalk Green onion (chopped)
  • Soy sauce (to taste, for marinating and seasoning the rice)
  • Worcestershire sauce (to taste)
  • Oyster sauce (to taste)
  • Seasonings (salt, garlic salt, and onion salt to taste)
  • 3 tbsp Vegetable oil (for frying the ingredients separately)

Steps

    In a pot or rice cooker, brown one and a half cups of previously rinsed rice for approximately 5 minutes.

    Add one and a half cups of water to the rice. Cook for about 20 minutes over low heat until the rice is firm but cooked. It is important not to overcook it to prevent it from getting mushy when mixing.

    While the rice is cooking, chop the chicken and pork, and clean the shrimp.

    Season the shrimp with salt, garlic salt, and onion salt.

    Season the pork and chicken with salt, garlic salt, onion salt, and a splash of soy sauce.

    In a skillet with a little oil, fry the shrimp for approximately 7 minutes until they are pink and cooked through. Remove and set aside.

    In the same skillet, fry the pork until well cooked and browned. Remove and set aside.

    Fry the chicken in the same skillet until completely cooked. Remove and set aside.

    In the same skillet, add the chopped vegetables (celery, green onion, and carrot). Sauté for 2 or 3 minutes and momentarily remove them from the heat.

    Prepare the beaten egg in the skillet as an omelet or scrambled. Once ready, return the vegetables to the skillet.

    Incorporate the cooked rice into the skillet with the vegetables and egg.

    Add soy sauce, Worcestershire sauce, and oyster sauce to taste. Mix well and taste for seasoning, being careful with the salt since the sauces are salty.

    Add the reserved meats (chicken, pork, and shrimp) to the rice mixture.

    Stir everything very well over low heat for an additional 5 minutes to integrate the flavors before serving.

Notes

The secret is to leave the rice firm so it doesn't become mushy when stirring. It is not recommended to add salt to the rice while it's cooking because the sauces (soy, Worcestershire, oyster) already contain a lot of salt. You can add peas if desired.
