  • 2 eggs (for the dough)
  • 50 g sugar (for the dough)
  • 50 g butter (melted)
  • 4 g salt
  • 450 ml milk (warm)
  • 8 g dried yeast
  • 750 g flour (all-purpose)
  • 7 g baking powder
  • 120 g cheddar cheese (grated)
  • 120 g ham (grated or finely chopped)
  • 1 egg (for egg wash)
  • 8 g white sesame seeds (for topping)
  • 120 g mayonnaise (for sauce)
  • 50 g mustard (for sauce)
  • 80 g ketchup (for sauce)
  • 15 g sugar (for sauce)
  • 10 ml apple vinegar (for sauce)
  • 150 g pickled cucumbers (grated on a small grater)

Steps

    Crack 2 eggs into a large Ziploc bag.

    Add 50 g sugar, 50 g melted butter, 4 g salt, 450 ml warm milk, and 8 g dried yeast to the bag.

    Add 750 g flour and 7 g baking powder to the bag.

    Close the bag and knead the mixture from the outside until an elastic dough forms.

    Leave the dough in the bag to rise for 1 hour.

    Take the dough out onto a floured table and divide it into equal pieces.

    Roll out the pieces into thin sheets with a rolling pin and cut them into equal triangles.

    In a bowl, mix 120 g grated cheddar cheese and 120 g grated ham.

    Place a portion of the ham and cheese filling on the wide end of each dough triangle.

    Roll the dough triangles up into croissant shapes.

    Place the croissants on a baking sheet and leave them to rise for another 20 minutes.

    Beat 1 egg with a fork and brush the croissants with the egg wash.

Notes

The Ziploc bag method keeps your hands and counter clean during the initial mixing and kneading phase. Ensure the milk is warm but not hot (around 110°F) to avoid killing the yeast.
