Ingredients

  • 200 g Pasta (such as fusilli or penne)
  • 2 cup Frozen peas (thawed or briefly blanched)
  • 2 Garlic (cloves, peeled)
  • 0.5 Lemon juice (juice of half a lemon)
  • 2 tbsp Olive oil (extra virgin)
  • Salt (to taste)
  • Black pepper (to taste)
  • 0.25 cup Pasta water (reserved from boiling pasta)

    Bring a large pot of salted water to a boil.

    Add the pasta to the boiling water and cook according to package instructions until al dente.

    While the pasta cooks, place the frozen peas in a blender or food processor. If the peas are very icy, you can blanch them in the pasta water for 1 minute first.

    Add the garlic cloves, lemon juice, olive oil, salt, and black pepper to the blender with the peas.

    Before draining the pasta, reserve about 1/4 cup of the starchy pasta water.

    Add the reserved pasta water to the blender and blend the pea mixture until completely smooth and creamy.

    Drain the pasta and return it to the pot.
