Ingredients
- 1 Whole chicken (Cut into pieces; skin removed if preferred for a clearer soup)
- 30 g Codonopsis Root (Dang Shen) (Gently boosts energy levels)
- 20 g Solomon’s Seal (Yu Zhu) (Hydrates and clears dryness)
- 6 Red Dates (Pitted)
- 1 tbsp Goji Berries (Added at the end of cooking)
- 1.5 L Water (Adjust based on pot size)
- Salt (To taste)

Blanch the chicken pieces in boiling water for 3-5 minutes to remove impurities. Drain and rinse the chicken under cold water.

Rinse the Codonopsis (Dang Shen), Solomon’s Seal (Yu Zhu), and red dates under running water to remove any dust.

Place the blanched chicken, Codonopsis, Solomon’s Seal, and red dates into a large soup pot or ceramic slow cooker.

Pour in 1.5 liters of water, ensuring all ingredients are fully submerged.

Bring the pot to a boil over high heat, then immediately reduce the heat to low.

Simmer gently for 1.5 to 2 hours. If using a slow cooker, set to high for 4 hours or low for 6-8 hours.

Add the goji berries during the last 10 minutes of cooking to prevent them from becoming too sour or mushy.

Season with salt to taste before serving hot.
Notes
This soup is particularly beneficial for those experiencing 'heatiness' or fatigue from lack of sleep. Codonopsis is a milder alternative to Ginseng, making it suitable for most body types.
