Ingredients

  • 400 g Canned chickpeas (Reserve the chickpea liquid (Aquafaba); use the drained chickpeas for blending)
  • 1 tbsp Tahini
  • 0.5 Lemon juice (Juice of approximately half a lemon)
  • 5 g Ground cumin
  • Salt (A pinch, adjusted to taste)
  • 3 Garlic
  • 1 tbsp Olive oil (For blending or drizzling over the top when serving)
  • Paprika (Sprinkle over the top when serving, to taste)
  • Crushed sesame seeds (Sprinkle over the top when serving, to taste)
  • Chickpea liquid (Aquafaba) (Add a small amount as needed to make the hummus silkier; it can also be used as an egg-white substitute in baking)

Steps

    Open the can of chickpeas and first reserve the chickpea liquid (Aquafaba), then drain the chickpeas. Add the chickpeas, tahini, the juice of half a lemon, ground cumin, salt, garlic, and olive oil to a high-speed blender.

    Secure the blender lid. Pulse briefly first, then blend continuously for approximately 15 seconds to 1 minute, until the hummus is smooth and thick. If the dip is too thick, add a small amount of the reserved chickpea liquid and continue blending to achieve a silkier texture.

    Transfer the hummus to a serving plate and smooth it with the back of a spoon or create decorative swirls.

    Drizzle a small amount of olive oil over the top and garnish with paprika and crushed sesame seeds.

    Serve with fresh vegetables or whole-wheat bread, or stir the hummus into a salad dressing.

Notes

Do not discard the chickpea liquid: Aquafaba has a thick consistency and can be used as an egg-white substitute in baking, or added to hummus to improve its smoothness. Store the finished hummus in an airtight container in the refrigerator for 4 to 5 days. The original recipe lists the nutritional information per serving as approximately 166 calories, 6 g protein, 15 g carbohydrates, and 9 g fat; the exact values will vary depending on how thoroughly the chickpeas are drained and the amounts of tahini and oil used for garnish.
