  • 2 Yukon Gold potatoes (Peeled and cut into 1/2-inch cubes)
  • 3 cloves garlic (Finely minced)
  • 1 tbsp fresh ginger (Finely grated)
  • 0.25 cup all-purpose flour (For thickening the filling)
  • 3 cups chicken stock (Preferably low-sodium)
  • 3 oz Japanese curry roux (Broken into pieces; use mild, medium, or hot to taste)
  • 1 cup frozen peas (Thawed)
  • 0.5 cup heavy cream (For a richer filling)
  • 1 sheet prepared puff pastry (Thawed but kept cold; enough to cover a 9-inch pie dish)
  • 1 large egg (Beaten with 1 tablespoon water for egg wash)
  • 1 tbsp water (For the egg wash)

Steps

    Preheat the oven to 400°F (200°C). Place a 9-inch deep-dish pie plate or similarly sized baking dish on a rimmed baking sheet to catch any bubbling filling.

    Season the chicken pieces with half of the salt and pepper. Heat the oil in a large Dutch oven or deep skillet over medium-high heat until shimmering.

    Add the chicken in a single layer, working in batches if necessary. Brown it for 3 to 4 minutes per side; it does not need to be fully cooked through. Transfer the chicken to a plate.
