Ingredients
- 1 lb Rigatoni pasta (cooked according to package directions)
- 2 tbsp Butter (cubed)
- 3 Garlic (cloves, minced)
- 2 cup Cherry tomatoes (whole)
- 1 cup Heavy cream (or creamy tomato base)
- 1 tsp Dried herbs (such as Italian seasoning)
- 0.5 tsp Red pepper flakes (to taste)
- 1 round Boursin-style cheese (herb-flecked Gournay cheese (approx 5.2 oz))
- 0.25 cup Fresh basil (sliced, plus extra for garnish)
- 0.25 cup Parmesan cheese (grated, plus extra for finishing)
Steps
- 1
Melt the butter cubes in a large non-stick skillet over medium heat until the butter is foamy.
- 2
Add the minced garlic to the skillet and stir constantly until it becomes fragrant, about 1 minute.
- 3
Add the cherry tomatoes to the skillet with the garlic and butter.
- 4
Pour in the cream or creamy tomato base.
- 5
Sprinkle in the dried herbs and red pepper flakes.
- 6
Stir the mixture until the sauce turns a warm orange color and begins to simmer.
- 7
Place the whole round of Boursin-style cheese in the center of the sauce and let it sit for a minute to soften.
- 8
Add the cooked rigatoni pasta to the skillet.
- 9
Fold everything together, breaking up the cheese and stirring until the pasta is fully coated in a creamy, uniform sauce.
- 10
Add the sliced fresh basil and a light dusting of grated parmesan cheese.
- 11
Serve immediately in warm bowls, finishing with extra fresh basil and a final sprinkle of parmesan.
Notes
For the best results, ensure the pasta is cooked al dente before adding it to the sauce. If the sauce becomes too thick, you can add a splash of the pasta cooking water to loosen it up.
