- 4 yellow onions (large, sliced into half moons)
- 0.5 cup sun-dried tomatoes (chopped)
- 0.25 cup olive oil
- 2 tbsp balsamic vinegar
- 1 garlic bulb (top sliced off to expose cloves)
- 1 tsp dried oregano
- salt (to taste)
- black pepper (to taste)
- 1.5 lb chicken breast (cut into strips)
- 0.33 cup heavy cream
- 0.25 cup fresh parsley (chopped)

Preheat your oven to 400°F (200°C).

In a large baking dish, combine the sliced onions and chopped sun-dried tomatoes.

Season the onion mixture with dried oregano, salt, and black pepper.

Drizzle the olive oil and balsamic vinegar over the onions and toss well to coat.

Place the whole garlic bulb (with the top sliced off) in the center of the dish, nestled among the onions.

Bake in the preheated oven for 1 hour, or until the onions are soft and caramelized.

Remove the dish from the oven. Carefully squeeze the roasted garlic cloves out of their skins and into the onion mixture; discard the skins.
