Beef Wellington with Cheesy Mashed Potatoes

Ingredients
- 800 g Beef Fillet (Center-cut, trimmed)
- 2 tbsp Olive Oil (For searing the beef)
- Salt and Black Pepper (To taste)
- 250 g Mushrooms (Finely chopped for duxelles)
- 6 slices Prosciutto or Parma Ham (To wrap the beef)
- 400 g Puff Pastry (One sheet, chilled)
- 1 Egg (Beaten for egg wash)
- 1 kg Potatoes (Peeled and cubed for mashing)
- 250 ml Lancewood Cheese Sauce (From the Sauce Delight range; added to mashed potatoes)
- 1 pack Lancewood Mushroom or Pepper Sauce (For serving)

Season the beef fillet generously with salt and pepper on all sides.

Heat olive oil in a large pan over high heat. Sear the beef fillet for 1-2 minutes per side until browned all over, then remove from the pan and let it cool.

Finely chop the mushrooms and sauté them in the same pan until all moisture has evaporated and they form a thick paste (duxelles). Season and set aside to cool.

Lay out a sheet of plastic wrap. Arrange the prosciutto slices in an overlapping rectangle. Spread the mushroom duxelles evenly over the prosciutto.

Place the seared beef in the center and use the plastic wrap to roll the prosciutto and mushrooms tightly around the beef. Chill in the fridge for 15-20 minutes to set the shape.

Preheat your oven to 400°F (200°C).

Roll out the puff pastry sheet. Remove the plastic wrap from the beef and place the beef on the pastry. Wrap the pastry around the beef, trimming any excess, and seal the edges.

Brush the pastry with the beaten egg wash. You can lightly score the top with a knife for decoration.

Bake for 25-35 minutes, or until the pastry is golden brown and the beef reaches your desired internal temperature (approx. 125°F for medium-rare). Let it rest for 10 minutes before slicing.

While the beef is baking, boil the potatoes in salted water until tender. Drain well.

Mash the potatoes and stir in the Lancewood Cheese Sauce until creamy and well combined.
