Ingredients
- 1 stick butter (melted; about 8 tablespoons)
- 2 chicken breast (cooked and shredded; rotisserie chicken can be used for convenience)
- 12 oz frozen peas and carrots (1 bag; or your favorite frozen veggie mix)
- 1 tsp onion powder
- 1 tsp garlic powder
- salt and pepper (to taste)
- 1 box Red Lobster Cheddar Biscuit mix (including the seasoning packet)
- 2 cup milk (full fat milk recommended)
- 10.5 oz cream of chicken soup (1 small can)
- 2 cup chicken stock (low sodium recommended to control saltiness)

Preheat the oven to 375°F (190°C).

Pour the melted stick of butter into the bottom of a 9x13 inch baking dish.

Layer the shredded cooked chicken evenly over the butter, followed by the bag of frozen peas and carrots.

Sprinkle the onion powder, garlic powder, and salt and pepper to taste over the chicken and vegetable layer.

In a medium bowl, whisk together the Red Lobster cheddar biscuit mix (including the enclosed seasoning packet) and the 2 cups of milk until combined.

Pour the biscuit mixture over the chicken and vegetables. Do not stir or mix the layers.

In a separate bowl, whisk the cream of chicken soup with the chicken stock until well combined.

Pour the soup and stock mixture over the top of the biscuit mix. Again, do not stir; let the layers remain separate.

Bake uncovered for 45 minutes until the biscuit layer has risen to the top and is golden brown.

Remove from the oven and let the cobbler rest for 15 minutes to allow the sauce to thicken before serving.
Notes
Do not stir the layers; the magic of this recipe happens as the biscuit mix rises through the liquid during baking. For a lower sodium version, use low-sodium chicken stock and omit the extra salt, as the biscuit seasoning and soup already contain significant sodium. You can substitute the peas and carrots with a California blend (broccoli, cauliflower, carrots) or just broccoli if preferred.
