Weights are estimates. Together, the ingredients weigh about 545 g before cooking, which is about 55 g per serving.
Steps
In a medium mixing bowl, mash the very ripe banana.
Stir in the peanut butter, almond flour, and a pinch of salt until a dough forms. If desired, mix in 1–2 tablespoons maple syrup for added sweetness and/or 1 teaspoon vanilla for enhanced flavor.
Refrigerate the dough for 10 minutes to firm it up.
Preheat the oven to 350°F (180 °C) (175°C (350 °F)).
Scoop 2 tablespoons of dough for each cookie and use your hands to roll it into a ball. Optionally roll each ball in granulated sugar, then place it on a baking sheet. Repeat with the remaining dough; the source says this makes about 10 cookies.
Using the back of a fork, press down on each dough ball to make a crisscross pattern.
Bake for 10–13 minutes, until the outsides are golden and the tops are slightly puffed.
Remove the cookies from the oven. While they are still warm, press one chocolate kiss into the middle of each cookie.
Let the cookies cool for 5 minutes before transferring them to a wire rack or enjoying them.
