Weights are estimates. Together, the ingredients weigh about 355 g before cooking, which is about 45 g per serving.
Steps
In a large bowl, combine the peanut butter, maple syrup, and almond flour. Fold until a thick dough forms.
Scoop a large tablespoon of dough at a time and shape each portion into an egg by hand. The mixture should make 6 large or 8 medium eggs.
Place the shaped eggs on a parchment-lined dish and freeze for at least 30 minutes.
Melt the chocolate chips and coconut oil together, stirring until smooth.
Dip each chilled egg into the melted chocolate to coat it fully. Shake off excess chocolate and place the eggs on parchment paper.
If desired, top the coated eggs with sea salt. Refrigerate for about 10 minutes, until the chocolate is set.
Notes
Makes 6 large or 8 medium eggs. The source does not specify a method or temperature for melting the chocolate.
