One Pot Creamy French Onion Pasta

- 2 yellow onions (sliced)
- 1 tbsp olive oil (for sautéing)
- 2 tbsp unsalted butter
- water (as needed for deglazing onions)
- 4 oz pancetta (diced)
- 3 garlic (cloves, minced)
- 0.25 cup dry white wine (for deglazing)
- salt (to taste)
- 1 tsp dried thyme
- 1 tsp fresh rosemary (finely chopped)
- 1 lb dry pasta (such as rigatoni or penne)
- 4 cup beef broth (enough to cover pasta)
- 0.5 cup heavy cream
- 0.5 cup Parmesan cheese (grated)
- 1 cup Gruyere cheese (freshly shredded)

Slice the onions thinly. Heat a large pot over medium heat and add oil and butter.

Add the onions to the pot. To caramelize them quickly (within 10-15 minutes), let them brown significantly on the bottom, then deglaze with a splash of water, scraping up the browned bits. Repeat this process until the onions are deep golden brown and soft.

Add the diced pancetta to the pot and cook until it becomes nice and crispy.

Add the minced garlic and mix everything together, sautéing for about 1 minute until fragrant.

Deglaze the pot with a touch of white wine, scraping the bottom to release all the flavor.

Season with salt, dried thyme, and fresh rosemary.

Add the dry pasta and pour in the beef broth until the pasta is just covered.

Notes
To make this alcohol-free, substitute the white wine with more beef broth or a splash of apple cider vinegar. If you don't eat pork, substitute the pancetta with smoked beef or mushrooms for an earthy flavor.
