Ingredients
- 3 cup white rice, cooked (The recipe specifies cooked rice; the author says frozen white rice was used.)
- 4 cup milk
- 1 tbsp vanilla extract
- 2 tsp cinnamon (Used with the apples and in the pudding.)
- 2 tbsp sweetened condensed milk
- 1.5 cup apples, chopped
- 3 tbsp brown sugar
- salt (Pinch; recipe also specifies a pinch in the pudding.)
- 0.25 cup apple granola (For garnish.)
- salted caramel (For garnish; amount not specified.)
Steps
- 1
Place the chopped apples, cinnamon, and brown sugar in a large pan over medium-high heat. Mix and cook until bubbling.
- 2
Lower the heat and continue stirring until the apples soften and a caramel-like mixture forms.
- 3
Put the cooked rice in a large pan with the milk, sweetened condensed milk, and cinnamon. Stir and let the mixture come to a boil.
- 4
Add the vanilla extract and a pinch of salt.
- 5
Lower the heat and continue stirring until the rice pudding thickens.
- 6
When the milk is almost evaporated, remove the pudding from the stove and let it cool slightly so it thickens further.
- 7
Spoon the apple pie rice pudding into cups. Top with apple granola, drizzle with salted caramel, and serve.
Notes
The ingredient list names salted caramel as a garnish but gives no quantity. Salt is listed as a pinch; the instructions use a pinch in the pudding as well. The recipe does not state whether cinnamon should be divided between the apple topping and pudding.
