Seared Miso Chicken in Ginger Broth

Ingredients
- 4 chicken thighs (double recipe if you have more chicken)
- 2 tbsp miso paste (for marinade)
- 4 tbsp soy sauce (for marinade)
- 2 tbsp rice wine vinegar (for marinade)
- 2 tbsp honey (for marinade)
- 4 garlic cloves (grated, for marinade)
- 2 tbsp sesame oil (for marinade)
- 2 tsp mirin (for marinade)
- 4 cup chicken broth (for broth)
- 1 spring onion (roughly chopped, for broth)
- 4 cm fresh ginger (roughly chopped, for broth)
- 1 garlic clove (roughly chopped, for broth)
- salt and pepper (to taste)
- 2 cup cooked rice (for serving)
- green onions (sliced, for garnish)
- garlic chili crunch (for garnish)

In a bowl, combine the miso paste, soy sauce, rice wine vinegar, honey, 4 grated garlic cloves, sesame oil, and mirin to create the chicken marinade. Add the chicken thighs and ensure they are well coated.

Prepare your rice according to package instructions so it is ready for assembly.

Heat a pot or large skillet over high heat. Sear the chicken thighs until they are cooked through and have developed a nice, dark glaze. Once finished, remove the chicken from the pot and set aside.

In the same pot used for the chicken, add the chicken broth, roughly chopped spring onion, chopped ginger, and the remaining chopped garlic clove.

Bring the broth to a simmer, allowing the aromatics to infuse. Season with salt and pepper to taste, and continue to taste as you go.

To assemble the bowl, place a portion of rice in the bottom of a bowl.

Pour the hot ginger broth over the rice.

Top with the seared miso chicken. You may also add your favorite vegetables at this stage.

Garnish with sliced green onions and a spoonful of garlic chili crunch. Serve immediately while hot.
Notes
If the marinade causes the bottom of the pan to burn during searing, you may want to lightly wipe the pan before starting the broth or add a little extra miso paste directly to the broth for deeper flavor.
