Ingredients
- 0.75 cup milk
- 2 shots espresso (About 2 fl oz / 60 ml total; cool slightly before mixing if hot.)
- 2 tbsp maple syrup
- 1 tbsp vanilla bean paste
- salt (A pinch.)
- 0.5 cup chia seeds
- 1 cup Greek yogurt (Plain Greek yogurt; mix into the pudding after adding the chia seeds.)
- Greek yogurt, for topping (Amount to taste.)
- cacao powder (For dusting; amount to taste.)

Add the milk, espresso, maple syrup, vanilla bean paste, and a pinch of salt to a bowl or container. Stir until the maple syrup and vanilla are evenly incorporated.

Add the chia seeds and stir thoroughly so they are distributed throughout the liquid rather than clumping together.

Mix in the Greek yogurt until the pudding base is smooth and creamy.

Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the chia seeds have absorbed the liquid and the pudding is thick and scoopable.

Serve cold, topped with Greek yogurt and a dusting of cacao powder.
Notes
