One Pot Lasagna with Meatballs

Imported by Amanda Aisen on SeeMeCook

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 lb Italian sausage (Sweet or spicy; remove the casing and roll into meatballs.)
  • 2 shallots (Finely chopped)
  • 3 garlic cloves (Minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp sweet paprika
  • 1 tsp dried sage
  • 0.5 tsp crushed red pepper flakes
  • 2 carrots (Peeled and diced)
  • 0.5 cup white wine (Such as Pinot Grigio or Chardonnay)
  • 1 cup chicken broth
  • 3 cups crushed tomatoes
  • 4 oz cream cheese (At room temperature)
  • 7 oz no-boil lasagna noodles
  • 2 mozzarella balls (Torn into small pieces)
  • 2 oz cheddar (Shredded)
  • 1 oz Parmesan (Grated)
  • parsley (Chopped, optional, for serving)
  • black pepper (Sprinkle over the cheese topping; amount unspecified)
  • crushed red pepper flakes (Sprinkle over the cheese topping; amount unspecified)

Steps

  1. 1

Complete the preparation before cooking: mince the garlic, finely chop the shallots, and peel and dice the carrots. Remove the sausage casings and roll the sausage into meatballs.

  2. 2

For an optional crispy, golden-brown top, turn on the broiler and use an ovenproof skillet.

  3. 3

Heat the olive oil and butter in a large high-sided skillet or Dutch oven over medium-high heat.

  4. 4

Add the meatballs and brown them on all sides, about 6 minutes. Remove them from the skillet, leaving as much of the rendered grease in the pan as possible.

  5. 5

Add the shallots and garlic to the skillet and cook for 2 minutes.

  6. 6

Stir in the salt, black pepper, paprika, and sage.

  7. 7

Add the carrots and cook for 1 minute.

  8. 8

Pour in the white wine and simmer for 2 minutes. Use a wooden spoon to scrape up the browned bits from the bottom of the skillet as you stir.

  9. 9

Add the chicken broth and bring it to a boil.

  10. 10

Add the crushed tomatoes, then slowly stir in the cream cheese until it has melted. Bring the sauce to a simmer.

  11. 11

Add the lasagna noodles. Spread them into an even layer and press them down so they are submerged in the sauce.

  12. 12

Reduce the heat to medium-low and simmer uncovered, stirring occasionally to keep the noodles from sticking, for about 15 minutes or until the sauce has thickened slightly.

  13. 13

Return the meatballs to the skillet along with their released juices.

  14. 14

Top with cheddar, mozzarella, and Parmesan. Sprinkle with black pepper and red pepper flakes.

  15. 15

Cover and simmer over low heat for about 10 minutes.

  16. 16

Remove from the heat, sprinkle with parsley if using, and let stand for 10 minutes before serving.

  17. 17

Alternatively, place the ovenproof skillet under the broiler to brown the top; the source does not specify a broiling time.

Notes

The author suggests serving with a salad and garlic bread. Optional sauce additions include mushrooms, spinach, sun-dried tomatoes, or roasted peppers. Sour cream, cottage cheese, or ricotta may be used instead of cream cheese; full-fat cream cheese at room temperature is recommended to help prevent curdling. The source does not specify a broiling duration. The optional cheese-top pepper amounts are not stated.
