Ingredients

  • 1.5 cup rolled oats, ground into flour (Use oat flour if preferred.)
  • 0.5 cup plain or vanilla protein powder (A whey or plant-based powder may be used.)
  • 2 tsp ground cinnamon (Divided between the dough and coating if desired.)
  • 0.5 tsp baking powder
  • 0.25 tsp fine salt
  • 2 tbsp butter or coconut oil, melted (Cool slightly before mixing.)
  • 3 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 2 tbsp milk or water (Add only enough to bring the dough together.)
  • 2 tbsp granulated sugar or coconut sugar (For coating the baked cereal.)
  • 1 tsp ground cinnamon (For the cinnamon coating.)

Steps

    Preheat the oven to 180°C/350°F. Line a baking sheet with parchment paper.

    Add the rolled oats to a blender or food processor and blend until they have the consistency of fine flour.

    In a bowl, whisk together the oat flour, protein powder, cinnamon, baking powder, and salt until evenly combined.

    Add the melted butter or coconut oil, maple syrup or honey, and vanilla extract. Stir until the mixture forms a crumbly dough.

    Add the milk or water a little at a time, mixing after each addition, until the dough holds together when pressed. Do not make it wet or sticky.

    Place the dough between two sheets of parchment paper and roll it very thin, approximately 2–3 mm thick. Thin dough produces the crispest cereal.

    Remove the top sheet of parchment. Cut the dough into small squares using a knife, pizza cutter, or pastry wheel. Transfer the squares to the lined baking sheet, leaving a little space between them.

    Bake for approximately 10–12 minutes, until the squares are firm and lightly golden around the edges.

    While the cereal bakes, mix the sugar or coconut sugar with the remaining cinnamon in a small bowl.

    Remove the cereal from the oven and, while it is still warm, toss or sprinkle it with the cinnamon-sugar mixture.

    Allow the cereal to cool completely on the baking sheet. It will crisp further as it cools. Serve with milk or eat as a crunchy snack.
