Homemade Crunchy Nut Clusters

Homemade Crunchy Nut Clusters

Crispy, chocolate-studded nut clusters inspired by Kellogg’s Crunchy Nut Clusters. These homemade cereal clusters are sweet, crunchy, and higher in protein and fiber than the supermarket version, making them suitable for serving with milk or over yogurt and berries.

Ingredients

  • 2 cup rolled oats (Use old-fashioned oats.)
  • 1 cup mixed nuts (Roughly chopped; use a mixture such as almonds, peanuts, walnuts, or hazelnuts.)
  • 0.5 cup smooth peanut butter (Almond butter may be substituted.)
  • 0.25 cup maple syrup (Honey may be substituted.)
  • 0.5 cup dark chocolate chips (Fold in after baking so the chips retain their shape, or sprinkle over the warm clusters.)
  • 1 tsp ground cinnamon
  • fine salt (A pinch, or to taste.)

Steps

  1. 1

Preheat the oven to 180°C/350°F. Line a baking sheet with parchment paper.

  2. 2

Add the rolled oats, chopped mixed nuts, cinnamon, and a pinch of salt to a large bowl. Stir until evenly combined.

  3. 3

Warm the peanut butter and maple syrup together in a small saucepan over low heat, stirring until smooth and pourable. Do not let the mixture boil.

  4. 4

Pour the warm peanut-butter mixture over the oat-and-nut mixture. Stir thoroughly until all of the dry ingredients are coated and the mixture holds together in rough clumps.

  5. 5

Transfer the mixture to the lined baking sheet. Spread it into an even layer, keeping some larger clusters intact rather than breaking everything apart.

  6. 6

Bake for approximately 18–20 minutes, or until the clusters are golden brown and crisp around the edges. Rotate the tray halfway through baking if needed for even browning.

  7. 7

Remove the tray from the oven and allow the clusters to cool completely on the baking sheet. They will firm up and become crunchier as they cool.

  8. 8

Fold in or scatter over the dark chocolate chips once the clusters are cool enough that the chocolate will not completely melt. Serve with milk, or spoon over yogurt with berries.
