- 2 Zucchini (sliced into half-moons)
- 1 Red bell pepper (chopped into bite-sized pieces)
- 1 Yellow bell pepper (chopped into bite-sized pieces)
- 1 Red onion (cut into wedges)
- 3 tbsp Olive oil
- 3 cloves Garlic (minced)
- 1 tsp Dried oregano
- 0.5 tsp Salt (or to taste)

Wash and prep the vegetables: slice the zucchini into half-moons, chop the red and yellow bell peppers into bite-sized pieces, and cut the red onion into wedges.
