Steps
In a mixing bowl, blend 20g caster sugar and 200g softened cream cheese until smooth.
Add strawberry powder or jam to the cream cheese mixture to achieve the desired color and consistency.
Use a mini ice cream scoop or tablespoon to portion the cream cheese mixture onto a lined baking sheet.
Freeze the cream cheese portions until fully solid.
Meanwhile, in a large mixing bowl, whisk the 200g softened butter, 100g caster sugar, 70g brown sugar, and vanilla together.
Add the egg and egg yolk to the butter mixture, whisking until pale and fluffy.
In another mixing bowl, whisk together the 300g plain flour, 1/2 tsp baking soda, and 1 tsp salt.
Add the dry ingredients to the butter and egg mixture, mixing until well combined to form a dough.
Fold in the 1/2 cup freeze-dried strawberry pieces and 1 cup white chocolate chips.
Use an ice cream scoop to portion the dough.
Wrap the frozen cream cheese filling with the dough portions, ensuring the filling is completely enclosed.
Freeze the dough overnight or for at least 4 hours.
The next morning, preheat the oven to 185°C (375 °F) (365°F (190 °C)) fan-forced.
Bake the cookies directly from the freezer for 13 minutes.
Let the cookies cool completely, then refrigerate them.
Notes
These cookies are best served cold from the fridge. Ensure the cream cheese centers are completely frozen before wrapping them in dough to prevent leaking.
