Ingredients

  • 5 eggs
  • salt (a pinch)
  • 2 tbsp sugar
  • vanilla (vanilla extract or vanilla sugar)
  • 160 g flour (sifted)
  • 500 ml milk
  • 2 tbsp vegetable oil
  • 600 g sour cream (30% fat content)
  • 125 g mascarpone
  • condensed milk (used as a sweetener to taste instead of powdered sugar)
  • sour cherries (cherries in their own juice or cherry jam)
  • grated chocolate (for decoration)

Steps

    In a large mixing bowl, combine 5 eggs, a pinch of salt, 2 tablespoons of sugar, and vanilla. Whisk everything together very well.

    Sift 160 grams of flour into the egg mixture. Stir thoroughly to ensure there are no lumps.

    Gradually pour in 500 ml of milk while continuing to stir. Finally, add 2 tablespoons of oil to the batter.

    Cook the crepes one by one in a non-stick pan until you have a total of 15 crepes. Set them aside to cool.

    Prepare the cream by mixing 600 grams of 30% fat sour cream with 125 grams of mascarpone. Add condensed milk to taste as a sweetener and mix until smooth and well combined.

    Take one crepe and place a row of sour cherries (or cherry jam) along one edge. Roll the crepe up tightly into a tube. Repeat this for all 15 crepes.

    To assemble the cake, place 5 filled crepes side-by-side on a serving platter to form the base layer.

    Spread a layer of the prepared cream over the base layer of crepes.

    Place 4 filled crepes on top of the cream, followed by another layer of cream.

    Continue stacking in a pyramid shape: 3 crepes then cream, 2 crepes then cream, and finally 1 single crepe on top.

    Use the remaining cream to cover and level the entire exterior of the pyramid cake.

    Decorate the cake by sprinkling grated chocolate over the top.

    Refrigerate the cake for several hours, or preferably overnight, to allow the layers to set before serving.

Notes

The name 'Cușma lui Guguță' refers to a traditional Moldovan shepherd's hat. For the best results, use sour cherries in their own juice that have been well-drained to prevent the cake from becoming soggy.
