Weights are estimates. Together, the ingredients weigh about 2.97 kg before cooking, which is about 740 g per serving.
Steps
Place the potatoes in cold salted water and brine them for 20 minutes.
Transfer the brined potatoes to a pot and boil them until they are fork-tender. Drain thoroughly.
Arrange the drained potatoes on a parchment-lined tray. Use the bottom of another pan to press each potato down until it is flattened and broken open, creating rough edges for crisping.
Drizzle the smashed potatoes with avocado oil and coat them evenly. Add the minced garlic and distribute it over the potatoes.
Roast the potatoes at 400°F (200 °C) for 25–30 minutes, until they begin to turn deeply golden and crisp.
Increase the oven temperature to 425°F (220 °C) and roast for another 5–10 minutes, until the potatoes are deep golden and audibly crisp.
Remove the potatoes from the oven and season them with salt immediately while they are still hot.
While the potatoes roast, whisk together the Kewpie mayonnaise, ponzu sauce, Dijon mustard, lemon juice, chopped chives, chopped parsley, minced shallot, half of the sliced green onions, and red pepper flakes.
Pour or toss the prepared sauce over the hot crispy potatoes, coating them as desired.
Top with the remaining sliced green onion and serve immediately so the potatoes retain as much crispness as possible.
Notes
The post does not provide exact ingredient quantities, so the amounts are practical estimates for approximately four servings. The creator emphasizes serving immediately for maximum crispness.
